We’ve been showered with turkey burgers and feta tzatziki, pizza, pork tenderloin, a sausage tart, chicken salad, quinoa salad, this Asian salad (below) and lots of other treats. We’re forever grateful!
The visits also kept a regular stream of friends coming to us, which helped us from feeling too isolated. And as a bonus, we got lots of meal ideas. I’ve mostly devoured the food as soon as it gets here but took a minute to photograph this delicious Asian salad we got yesterday. I never make these but will start! Here’s the recipe. Combine the following ingredients:
shredded roast chicken
lime to squeeze on top
1/2 cup canola oil
1/4 cup rice wine vinegar
2 Tablespoons creamy peanut butter
1 teaspoon grated ginger
1 Tablespoon soy sauce
2 teaspoons of toasted sesame oil
1 Tablespoon honey
(Red pepper flakes, salt & pepper optional)
